Egg Mushroom & Kale Breakfast Bowl

Breaking your fast with a well balanced meal means that you’re giving your body amazing micro and macronutrients in order to thrive throughout the rest of the day!

Starting my day off with this meal just after my morning workout has been a favourite for a LONG time.

With only 77 calories, 6 grams of protein and 5 grams of quality fat per egg, this break-your-fast-meal, is a great post sweat meal loaded with not only flavour, but is jam pack full of Vitamins A, K and C along with flavonoids and polyphenols (antioxidants that combat free radical damage).

In under 10 minutes this meal can be on your plate having used only one frying pan total, making it an easy breezy, time crunch meal that is easily packed up to take on the go!

Ingredients-1 Servings

  • 2 whole eggs
  • 1 large handful of baby kale
  • 5 cremini mushrooms thinly sliced
  • 1 tbsp of feta cheese

  • ¼ tsp thyme
  • 1 tsp grass-fed butter
  • Salt and pepper to taste
  • 1 tsp EVOO

Directions

Step 1: In a large pan place ¼ of the butter in to melt at medium heat and toss the mushrooms in, top with a bit of thyme, and stir continuously for 2-3 minutes, remove and add to plate and top with feta

Step 2: Use the rest of the butter and cover the whole pan, on one side crack 2 eggs and allow to settle (break the yolk softly if you prefer) and add the kale to the other side while stirring constantly on medium heat

Step 3: Add thyme to the kale and top of the eggs, once cooked to desire, add to plate and enjoy!
