Since in quarantine, I’ve craved a lot of quality vegetarian meals with loads of flavour.

Since in quarantine, I’ve craved a lot of quality vegetarian meals with loads of flavour. This bowl is definitely a go-to of mine that includes great amounts of fats, protein, fibre, and quality carbohydrates that will keep you satiated until your next meal!

Although many people have the misconception that you need to have animal protein in every meal in order to consume enough ‘protein’, this couldn’t be farther from the truth! This meal offers over 25 grams alone and when accompanied with good fats, your body will definitely be feeling good and energized after this without the crash or cravings afterwards.

If you do desire more protein you can always double the quinoa, hummus, hemp hearts and feta, or of course, add half or a full chicken breast.

  • 1 cup arugula
  • ½ cup *cooked* quinoa
  • 2 tbsp hemp hearts
  • 1-2 tbsp feta
  • 2 tbsp hummus
  • 1 tsp pesto (I use sunflower kitchen)

  • 3-4 mushrooms

  • 6-8 sundried tomatoes

  • 10 olives

  • 2 tbsp olive oil

  • Salt/ Pepper to taste


Step 1: Chop mushrooms, sundried tomatoes and olives to your liking.

Step 2: Add all ingredients to a spacious bowl or plate and then drizzle olive oil, salt and pepper over top.

Step 3: ENJOY!
