Look no further! This protein-packed salad is loaded with flavour and offers a wonderful array of nutrients.

Making it the perfect snack and side dish for almost any dinner, lunch meal!

If you choose to eat Mediterranian Bean Medley as a main, feel free to top with grilled chicken breast or shrimp for added protein!

Ingredients

  • 2 cans of ‘mixed bean medley’ (rinsed)
  • 1 can of chickpeas (rinsed)
  • 15-20 cherry tomatoes cut in ½ or ¼
  • 5-7 large leaves of kale thinly chopped
  • ½ cup feta cheese (crumbled)
  • ½ cup feta cheese (crumbled)
  • 10 stalks of fresh basil finely chopped
  • ½ cup of olive oil
  • 1 tsp minced garlic
  • Salt
  • Pepper

Directions

Step 1: Rinse the beans and chickpeas.

Step 2: Cut cherry tomatoes and mince the garlic.

Step 3: Chop the large leaves of kale into thin amounts.

Step 4: Mix all ingredients in a bowl.

Step 5: Serve and enjoy
