Schnitzel With Sauteed Greens and Sauerkraut

Schnitzel With Sauteed Greens and Sauerkraut is the epitome of healthy meets guilty pleasures! 

I know I say this a lot, but this trio has to be one of my absolute favourite meals for dinner or lunches.

The flavours are perfectly paired and add the complexity of bitter, sour, spicy, and fried!

There is no doubt that this crowd-pleaser launch and dinner recipe will be requested weekly by all family members.

As a matter of fact, this is why I usually make double or sometimes triple the amount of schnitzel. After that, freeze in batches for easy dinners, you’ll just thaw and fry!

This plate is the epitome of healthy meets guilty pleasures!

Ingredients

  • 2-3 chicken breasts
  • 1 bunch of dandelion greens
  • ½ bunch of black kale
  • ½ loaf of sourdough bread
  • ½ bunch of parsley
  • ½ cup of grated parmesan
  • 1 tsp paprika
  • 1 tsp onion powder

  • 1 tsp garlic powder
  • 4 eggs
  • 1 cup flour (I used buckwheat)
  • ½ cup coconut oil
  • 1 tbsp butter
  • 1 cup sauerkraut
  • 2 tbsp dijon mustard

Directions

Step 1: Heat oven to 350° and bake bread on the pan for 30 minutes or until crispy. Then, place in blender with parsley, parmesan, paprika, onion, and garlic powder. Blend until a fine breadcrumb.

Step 2: Place whisked eggs, flour, and bread crumbs into separate bowls.

Step 3: Slice chicken in half horizontally so you have 2 thin pieces of chicken and tenderize until flattened with a mallet (do not over-flatten).

Step 4: Add coconut oil to a large saucepan and turn onto medium.

Step 5: Cover chicken with flour, then mix in the egg and then drop into the breadcrumbs and cover completely.

Step 6: Place breaded chicken into cook in a pan with oil and flip once slightly brown on the bottom (around 3-4 minutes) and cook for another 3-4 on this side).

Step 7: While chicken is cooking, chop all leafy greens into small pieces and place into a saucepan with butter and mix well with salt and pepper for 2-3 minutes on low-medium.

Step 8: Split all components of the meal evenly between 2 or 3 plates and ENJOY!

 

Notes

STORAGE SUGGESTIONS: When more than double the amounts are made, you can store them away in separate containers and freeze them for later. Once you ready to have Schnitzel With Sauteed Greens and Sauerkraut as a meal, take out the containers, make sure to thaw for a period of time before cooking on a frying pan.
